I don’t know about you, but I am nearing the end of both cooking desire and cooking ideas!  Whew, with everybody in, I feel like I’m constantly in the kitchen prepping meals, making snacks…you know the deal.  So, last week, I wised up and began looking for some new recipes based on items I already had. Below are a few that we really enjoyed!

Teriyaki Turkey Rice Bowl

I had no idea how easy it was to make teriyaki sauce!  This is a wonderful recipe that helped break up the monotony of my normal chicken, rice & veggie meal 😊.

Teriyaki Sauce

  • 1/2 cup Low Sodium Soy Sauce
  • 1/4 cup water
  • 2 tablespoons Red Wine Vinegar
  • 2 tablespoons brown sugar or less as desired
  • 2 tablespoons granulated sugar or less as desired
  • 2 teaspoons minced garlic
  • 1 teaspoon ground ginger
  • 1 tablespoon cornstarch
  • 2 tablespoons warm water

Ground Turkey

  • 1 tablespoon vegetable oil
  • 1/2 cup diced onion
  • 2 tablespoons minced garlic
  • 1 pound Ground Turkey
  • 1 cup finely chopped broccoli
  • 2 large carrots peeled and grated
  • 2 green onions diced, for garnish

Instructions

  1. Mix soy sauce, 1/4 cup water, red wine vinegar, sugars, garlic and ginger in a small saucepan over medium heat. Stir with a whisk until sugar is dissolved.
  2. In a small bowl, whisk together 2 tablespoons warm water and cornstarch until cornstarch is completely dissolved.
  3. Heat sauce over medium high heat. Slowly whisk in cornstarch mixture and simmer until thickened. Remove from heat and set aside.
  4. Heat vegetable oil in a large skillet over medium-high heat. Add diced onions and cook until soft.
  5. Crumble ground turkey and garlic into the pan and cook until turkey is about half cooked. Add grated carrots and chopped broccoli and continue to cook until turkey is no longer pink.
  6. Pour teriyaki sauce over cooked turkey and vegetable mixture and stir. Simmer for about five minutes to combine the flavors.
  7. Spoon meat over rice or noodles. Garnish with green onions and serve immediately.

Sweet Potato Ground Turkey Chili

I got this recipe from a friend and absolutely love it!  Not only is it made from ground turkey but it includes sweet potato.  I never thought I would enjoy sweet potato in a chili, but this is actually a delicious combination.  My family enjoyed this dish a lot!

Ingredients

  • 2 T olive oil
  • 1 small sweet onion coarsely chopped
  • 1lb ground turkey
  • 4 c sweet potatoes (peeled & cut into ½ in. cubes)
  • 2 T chili powder
  • 2 t cumin
  • 1 t paprika
  • 2 t salt
  • ¾ t pepper
  • 1/8 t cinnamon
  • 28 oz. can crushed tomatoes
  • 1 cup chicken broth or water
  • 1-15 oz. can sweet whole kernel corn (drained)
  • 1-15 oz. can black beans (drained)
  • Corn chips (optional)
  • Sour cream (optional)
  • Cooked rice (optional)

Instructions

  1. In a large saucepan, or a large shallow pot, drizzle olive oil. Add onions and sauté over medium heat for 2-3 minutes.
  2. Push onions to the side and add ground turkey. Continue cooking over medium heat for 6-8 minutes, or until turkey is almost cooked through.
  3. Add sweet potatoes and saute for another 2 minutes.
  4. In a small bowl combine chili powder, cumin, paprika, cinnamon, salt and pepper. Mix to combine.
  5. Pour crushed tomatoes, chicken broth and pre-mixed seasoning ingredients into the chili mixture. Mix chili thoroughly and reduce heat to a simmer.
  6. Cover pot and simmer for 20-25 minutes.
  7. Add drained corn and black beans. Cover and simmer for an additional 5-10 minutes.
  8. Check to see if sweet potatoes are fork-tender before serving. If you would like a slightly thicker chili, mash some of the sweet potatoes to help thicken it.
  9. Serve chili over rice with corn chips, cilantro and sour cream and enjoy!
